Hi, I’m Jayterra and today, I’m making
Moroccan style stuffed sweet potatoes. Ingredients: yams (or sweet potatoes), onion, apple, garlic, Ras el Hanout, spice blend, salt, pepper, chickpeas, maple syrup, cilantro and green onion. Ras el Hanout is a Moroccan spice blend. You can purchase it, or make your own. Mine includes the following spices. Yams or sweet potatoes, halved and placed face down on a parchment paper lined cooking tray. Bake at 400F for 30-40 minutes, until soft. Onion, 1/2, apple, 1/2, garlic, 4 cloves, green onion and cilantro, to garnish. Large pan on medium heat. Onions, and water, cook until soft. Apple, and garlic. Ras el Hanout spice blend,
2 or more teaspoons. Mix well. Add water regularly to prevent sticking. Chickpeas rinsed and drained. Maple syrup, 2 teaspoons. Test yams with a fork. Perfect. Four delicious, healthy and cheap meals.
